  • 2 cups (cooked) long-grain rice
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons scallions, sliced

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot or Dutch oven over medium heat.

Season the chicken thighs lightly with salt and pepper, then brown them in the pot for about 4–5 minutes per side. Remove the chicken and set aside.

Add the smoked sausage slices to the pot and cook until browned, about 4 minutes. Remove and set aside with the chicken.
