Ingredients

  • 2 cups Shredded unsweetened coconut
  • 1 cup Raw cashews
  • 1 cup Raw peanuts
  • 1 cup Dark chocolate chips (70% cocoa or higher)
  • 2 tablespoons Honey
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoons Sea salt

Directions

Step 1

Preheat a skillet over medium heat.

Step 2

Add the shredded coconut to the skillet and toast it for 2-3 minutes, stirring frequently, until it's golden brown and fragrant. Transfer it to a large mixing bowl to cool.

Step 3

In the same skillet, lightly toast the cashews and peanuts for 3-4 minutes, stirring occasionally. Add them to the bowl with the toasted coconut.

Step 4

In a microwave-safe bowl, melt the dark chocolate chips in 20-second intervals, stirring in between, until fully melted and smooth.

Step 5

Add the melted chocolate, honey, vanilla extract, and sea salt to the large mixing bowl. Stir until the coconut and nuts are fully coated with the chocolate mixture.

Step 6

Line a baking sheet with parchment paper.

Step 7

Using a spoon, scoop small mounds (about 2 tablespoons each) of the mixture onto the prepared baking sheet, spacing them about 1 inch apart.

Step 8

Refrigerate the clusters for at least 30 minutes, or until the chocolate has fully set.

Step 9

Once set, transfer the clusters to an airtight container and store them in the refrigerator for up to 2 weeks.

Step 10

Serve chilled as a sweet and nutty snack!
