  • 2 large, peeled and cubed sweet potatoes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups fresh spinach leaves
  • 0.25 cup, chopped fresh cilantro

Directions

Step 1

Heat the vegetable oil in a large pot over medium heat. Add the chicken thighs and brown them on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.
