  • 500 milliliters beef stock
  • 2 tablespoons peanut butter
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon curry powder
  • 0.25 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 2 medium carrots, sliced into rounds
  • 1 large sweet potatoes, peeled and cubed
  • 2 tablespoons fresh cilantro, chopped
  • 4 cups cooked white rice (optional, for serving)

Directions

Step 1

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.

Season the beef cubes with a pinch of salt and pepper. Add them to the pot and brown on all sides for about 4-5 minutes. Remove the beef and set aside.

In the same pot, reduce the heat to medium. Add the chopped onion and sauté for 3-4 minutes until softened.
