Ingredients

  • 500 grams fresh string beans (sitaw)
  • 300 grams pork belly, cut into cubes
  • 5 cloves garlic, minced
  • 1 medium onion, chopped
  • 0.5 cup soy sauce
  • 0.25 cup vinegar
  • 1 cup water
  • 2 pieces bay leaves
  • 1 teaspoon whole black peppercorns
  • 2 tablespoons cooking oil
  • 1 teaspoon sugar
  • 0 to taste salt
  • 0 to taste ground black pepper

Directions

Step 1

Start by washing the string beans thoroughly and then cutting them into 2-inch pieces. Set them aside.

Step 2

In a large pan or wok, heat the cooking oil over medium heat.

Step 3

Add the minced garlic and chopped onion, and sauté them until the onion becomes translucent and the garlic is fragrant.

Step 4

Add the pork belly cubes to the pan and cook until they are browned on all sides.

Step 5

Pour in the soy sauce and water, then add the bay leaves and whole peppercorns. Stir to combine.

Step 6

Let the mixture simmer for about 10 minutes, or until the pork is tender.

Step 7

Next, add the vinegar. Do not stir immediately. Allow it to boil for about 5 minutes to cook off the strong vinegar taste.

Step 8

Add the cut string beans to the pan. Stir to combine with the pork and adobo sauce.

Step 9

Cover the pan and let it simmer for another 5-7 minutes, or until the string beans are tender-crisp.

Step 10

Stir in the sugar and adjust the salt and pepper to taste.

Step 11

Once done, remove from heat and serve hot with steamed rice.
