Ingredients

  • 1000 grams fresh squid, cleaned
  • 60 ml white vinegar
  • 60 ml soy sauce
  • 60 ml water
  • 5 pieces garlic cloves, minced
  • 2 pieces bay leaves
  • 1 teaspoon black peppercorns
  • 1 medium onion, chopped
  • 1 medium tomato, chopped
  • 2 tablespoons cooking oil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper

Directions

Step 1

Start by preparing the fresh squid: remove the head, ink sac, innards, and transparent cartilage. Slice the cleaned squid into rings and set aside.

Step 2

In a medium bowl, combine the squid rings with white vinegar and half of the minced garlic. Marinate for about 10 minutes, then drain and reserve the marinade.

Step 3

Heat cooking oil in a large pan over medium heat. Add the remaining minced garlic and sauté until slightly browned. Add chopped onions and sauté until translucent.

Step 4

Stir in the chopped tomato and cook until soft. Add the marinated squid and continue to cook for 3-5 minutes until the squid turns opaque.

Step 5

Pour in the reserved marinade, soy sauce, water, bay leaves, and black peppercorns. Stir to combine.

Step 6

Add sugar, salt, and ground black pepper, then simmer for 10-15 minutes or until the squid is tender and sauce thickens.

Step 7

Adjust the seasoning with more salt and pepper if needed. Remove from heat and discard bay leaves before serving.

Step 8

Serve hot with steamed rice and enjoy!
