Ingredients

  • 12 oz spaghetti or linguine
  • 2 pcs ripe avocados
  • 8 oz fresh crab meat
  • 2 pcs garlic cloves
  • 3 tbsp lemon juice
  • 4 tbsp extra virgin olive oil
  • 1 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti or linguine and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, prepare the avocado sauce. In a food processor, combine the ripe avocados (halved, pitted, and scooped out), garlic cloves, lemon juice, olive oil, Parmesan cheese, salt, and black pepper. Blend until smooth and creamy. Add 2-3 tablespoons of the reserved pasta water to loosen the sauce if needed.

Step 3

In a large skillet over medium heat, add a tablespoon of olive oil. Gently sauté the crab meat for 1-2 minutes until just heated through. Be careful not to overcook, as crab meat is delicate.

Transfer the drained pasta to the skillet with the crab meat. Pour the avocado sauce over the pasta and toss gently to combine. If the sauce is too thick, add a bit of the reserved pasta water, one tablespoon at a time, until the desired consistency is reached.
