Ingredients

  • 4 medium ripe tomatoes
  • 1 large red bell pepper
  • 1 small onion
  • 2 small garlic cloves
  • 3 tablespoons fresh parsley
  • 2 tablespoons fresh mint
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon tomato paste
  • 1 teaspoon red pepper flakes
  • 1 teaspoon paprika
  • 0.5 teaspoon granulated sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Peel the tomatoes by scoring an 'X' on the bottom of each tomato, blanching them in boiling water for 30 seconds, then transferring them to ice water. Peel off the skins and set aside.

Step 2

Finely dice the peeled tomatoes and place them in a large mixing bowl.

Step 3

Roast the red bell pepper over an open flame or under a broiler until the skin is charred. Peel off the charred skin, remove seeds and stem, and finely chop the flesh. Add it to the bowl with the tomatoes.
