Ingredients

  • 300 grams Green beans (trimmed and chopped into 1/2 inch pieces)
  • 1 cup Grated coconut (fresh or frozen, thawed)
  • 4 pieces Shallots (thinly sliced)
  • 2 pieces Garlic cloves (crushed)
  • 2 pieces Green chilies (slit lengthwise)
  • 0.5 teaspoons Turmeric powder
  • 1 tablespoons Coconut oil
  • 0.5 teaspoons Mustard seeds
  • 2 pieces Dried red chilies
  • 1 sprig Curry leaves
  • 0.5 teaspoons Salt
  • 3 tablespoons Water

Directions

Step 1

Wash and trim the ends of the green beans, then chop them into 1/2 inch pieces.

Step 2

In a mixing bowl, combine the grated coconut, shallots, garlic, green chilies, and turmeric powder. Use your hands to mix well and slightly crush the mixture to release the flavors.

Step 3

Heat a large skillet or wok over medium heat and add the coconut oil.

Step 4

Once the oil is hot, add mustard seeds and let them splutter.

Step 5

Add the dried red chilies and curry leaves, stirring for a few seconds until aromatic.

Step 6

Add the chopped green beans to the skillet and mix well with the tempered spices.

Step 7

Add the coconut mixture to the beans and mix thoroughly to ensure even coating.

Step 8

Sprinkle salt and water over the mixture, then cover the pan with a lid.

Step 9

Cook on low-medium heat for 8-10 minutes, stirring occasionally to avoid sticking.

Step 10

Once the beans are tender and the coconut mixture has softened, remove the lid and stir-fry for another 2 minutes to evaporate any excess moisture.

Step 11

Turn off the heat and serve the Achingya Thoren warm with steamed rice or Kerala parathas.
