Ingredients

  • 2 cucumbers
  • 1 carrot
  • 4 shallots
  • 2 red chili peppers
  • 100 ml rice vinegar
  • 50 g sugar
  • 1 tsp salt
  • 100 ml water
  • 1 inch piece ginger

Directions

Step 1

Firstly, wash the cucumbers and slice them into thin rounds. Peel the carrot and cut it into thin strips or matchsticks.

Peel and thinly slice the shallots. Cut the red chili peppers into thin rings. If you prefer a milder acar, remove the seeds from the chili peppers before slicing.

Peel the ginger and slice it thinly.

In a small saucepan, combine the rice vinegar, sugar, salt, and water. Bring it to a simmer over medium heat, stirring until the sugar and salt dissolve completely. This should take about 3-5 minutes.
