Ingredients

  • 2 medium carrots
  • 2 medium cucumbers
  • 5 pieces shallots
  • 2 pieces red chilies
  • 120 milliliters white vinegar
  • 50 grams sugar
  • 10 grams salt
  • 100 milliliters water
  • 1 teaspoon turmeric powder

Directions

Step 1

Peel the carrots and cut them into thin sticks, about 2 inches long.

Step 2

Halve the cucumbers lengthwise and scoop out the seeds with a spoon. Cut the cucumber into similar-sized sticks as the carrots.

Step 3

Peel and thinly slice the shallots.

Step 4

Slice the red chilies into thin rings. Remove seeds if you prefer a milder flavor.

Step 5

In a small saucepan, combine the white vinegar, sugar, salt, water, and turmeric powder.

Step 6

Heat the mixture over medium heat, stirring occasionally, until the sugar and salt have dissolved completely. Do not boil.

Step 7

Remove the vinegar mixture from heat and let it cool to room temperature.

Step 8

In a large bowl, combine the carrots, cucumbers, shallots, and red chilies.

Step 9

Once the vinegar mixture has cooled, pour it over the vegetables, making sure all the vegetables are submerged.

Step 10

Cover the bowl with plastic wrap or a lid, and refrigerate for at least 2 hours before serving, allowing the flavors to meld.

Step 11

Serve as a side dish or condiment, and enjoy the refreshing taste of Indonesian acar.
