Ingredients

  • 1 cup Dried apricots
  • 1 cup Boiling water
  • 2 cups All-purpose flour
  • 1 cup Granulated sugar
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 2 Large eggs
  • 0.75 cup Milk
  • 0.25 cup Unsalted butter, melted and cooled
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper and set aside.

Step 2

Chop the dried apricots into small pieces. Place them in a bowl and pour 1 cup of boiling water over them. Let them soak for about 10 minutes, then drain and set aside.

Step 3

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, salt, and ground cinnamon.

Step 4

In another bowl, beat the eggs, then mix in the milk, melted butter, and vanilla extract until well combined.

Step 5

Pour the wet ingredients into the bowl of dry ingredients, stirring gently until just combined. Do not overmix.

Step 6

Fold in the soaked apricots and chopped walnuts (if using). Make sure they are evenly distributed throughout the batter.

Step 7

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

Step 10

Serve warm or at room temperature. Store any leftovers in an airtight container for up to 3 days.
