Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoons Ground cinnamon
  • 0.5 teaspoons Salt
  • 0.75 cups Granulated sugar
  • 0.5 cups Brown sugar
  • 0.5 cups Vegetable oil
  • 1 teaspoons Vanilla extract
  • 2 large Eggs
  • 1 medium Apple, grated
  • 1 medium Banana, mashed
  • 1 cup Carrot, grated
  • 0.5 cups Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, and salt.

Step 3

In a separate bowl, combine the granulated sugar, brown sugar, vegetable oil, and vanilla extract. Mix well until smooth.

Step 4

Add the eggs to the wet ingredients one at a time, beating well after each addition.

Step 5

Stir in the grated apple, mashed banana, and grated carrot until evenly distributed.

Step 6

Gradually fold the dry ingredients into the wet mixture using a spatula, being careful not to overmix. If using walnuts, fold them in at this stage.

Step 7

Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.

Step 9

Remove the bread from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing and serving.
