Ingredients

  • 1.75 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water
  • 1 cup unsalted butter (softened)
  • 3 cups powdered sugar
  • 0.5 cups strawberries (pureed)
  • 0.25 cups heavy cream
  • 1.5 cups semi-sweet chocolate chips
  • 0.75 cups heavy cream (for ganache)
  • 6 fresh strawberries (for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and set them aside.

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, cocoa powder, baking powder, baking soda, and salt. Mix well.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract. Beat on medium speed until the batter is smooth (about 2-3 minutes).

Step 4

Reduce the speed to low and carefully stir in the boiling water. The batter will be thin; this is normal.

Step 5

Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 6

Cool the cakes in the pans for 10 minutes, then remove them from the pans and cool completely on wire racks.

Step 7

To prepare the strawberry cream, beat the softened butter until creamy. Gradually add the powdered sugar and beat until light and fluffy.

Step 8

Stir in the pureed strawberries and heavy cream. Continue beating until smooth and fluffy. Add more powdered sugar if the cream is too loose, or more puree if you prefer a stronger strawberry flavor.

Step 9

Spread a generous layer of strawberry cream evenly on top of one cake layer. Place the second cake layer on top and gently press down.

Step 10

To prepare the chocolate ganache, heat the heavy cream in a small saucepan over medium heat until it simmers (do not boil). Remove from heat and pour over the semi-sweet chocolate chips in a heatproof bowl.

Step 11

Let the mixture sit for 2-3 minutes, then stir until smooth and glossy.

Step 12

Pour the ganache over the top of the cake, spreading it gently to allow some to drip down the sides for a decadent look.

Step 13

Refrigerate the cake for at least 30 minutes to allow the ganache to set.

Step 14

Garnish with fresh strawberries before serving, and enjoy your Aarsis Ultimate Valentine Cake!
