Ingredients

  • 500 grams Boneless chicken thighs
  • 1 cup, packed Fresh coriander leaves
  • 0.5 cup, packed Fresh mint leaves
  • 0.5 cup Greek yogurt
  • 1 tablespoon Ginger paste
  • 1 tablespoon Garlic paste
  • 2 pieces Green chilies
  • 2 tablespoons Lemon juice
  • 1 teaspoon Cumin powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Garam masala powder
  • 1 teaspoon Kasuri methi (dried fenugreek leaves)
  • 1 teaspoon (adjust to taste) Salt
  • 2 tablespoons Mustard oil
  • 6 pieces Skewers

Directions

Step 1

Clean and cut the boneless chicken thighs into medium-sized cubes. Pat dry with a paper towel.

Step 2

In a blender, combine fresh coriander leaves, mint leaves, green chilies, ginger paste, garlic paste, and lemon juice. Blend into a smooth paste. If needed, add a teaspoon of water to facilitate blending.

Step 3

In a mixing bowl, whisk Greek yogurt until smooth. Add the green herb mixture, cumin powder, coriander powder, garam masala, kasuri methi, salt, and mustard oil. Mix well to create the marinade.

Step 4

Add the chicken pieces to the marinade, ensuring each piece is well coated. Cover the bowl and let the chicken marinate in the refrigerator for at least 4 hours, or overnight for best results.

Step 5

If using wooden skewers, soak them in water for 30 minutes to prevent burning during cooking.

Step 6

Preheat your grill or oven to 200°C (400°F). If using an oven, line a baking tray with parchment paper or aluminum foil and lightly grease it.

Step 7

Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

Step 8

Place the skewers on the grill or in the oven. Cook for 8-10 minutes per side, turning them halfway through, until the chicken is cooked through and slightly charred on the edges.

Step 9

Once cooked, remove the skewers and let the chicken rest for 2-3 minutes. Garnish with fresh lemon wedges and serve hot with mint chutney and onion rings.
