Ingredients

  • 2 pieces chicken breast

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 pieces garlic cloves, minced
  • 1 cup frozen peas and carrots mix
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice

Directions

Step 1

Season the chicken breasts on both sides with salt, black pepper, garlic powder, onion powder, and paprika.

Heat the olive oil in a large skillet or sauté pan over medium-high heat.

Add the seasoned chicken breasts to the pan and sear for 2-3 minutes on each side until golden brown. Remove the chicken from the pan and set aside (it will finish cooking later).
