Quench your thirst with "A Most Excellent Raspberry Iced Tea," a refreshingly bold and fruity twist on classic iced tea. This recipe combines the robust flavor of black tea with the natural sweetness of fresh raspberries, enhanced by a touch of honey and a splash of zesty lemon juice. The homemade raspberry syrup, strained to silky perfection, takes center stage, while vibrant garnishes of fresh mint, lemon slices, and ripe raspberries add elegance to every glass. Perfectly chilled and brimming with summer vibes, this raspberry iced tea is an easy-to-make crowd-pleaser, ideal for sunny afternoons, picnics, or any time you crave a flavorful pick-me-up.
In a large pot, bring 4 cups of water to a boil.
Once boiling, remove the pot from heat and add the black tea bags. Let the tea steep for 5 minutes.
While the tea is steeping, in a medium saucepan, combine the raspberries, sugar, and 1 cup of water. Cook over medium heat, stirring occasionally, until the raspberries break down and the sugar dissolves (about 5 minutes).
Remove the raspberry mixture from heat and strain it through a fine mesh sieve into a bowl, pressing the pulp to extract as much liquid as possible. Discard the solids.
Remove the tea bags from the pot and pour the steeped tea into a pitcher. Stir in the strained raspberry syrup, honey, lemon juice, and the remaining 3 cups of cold water.
Refrigerate the pitcher for at least 1 hour, or until chilled.
To serve, fill glasses with ice cubes. Pour the raspberry iced tea over the ice.
Garnish each glass with a mint leaf, a few additional raspberries, and a lemon slice before serving. Enjoy!
