Ingredients

  • 400 grams spaghetti
  • 3 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2.5 cups whole milk
  • 100 grams parmesan cheese, grated
  • 150 grams mozzarella cheese, shredded
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon olive oil
  • 4 liters water
  • 1 tablespoon salt (for pasta water)

Directions

Step 1

Bring 4 liters of water to a rolling boil in a large pot. Add 1 tablespoon of salt to the water and stir. Add the spaghetti and cook according to the package instructions until al dente (firm to the bite). Drain the pasta, reserving 1/2 cup of pasta water, and set aside.

Step 2

In a medium saucepan, melt the butter over medium heat. Add the minced garlic and cook for 1 minute until fragrant but not browned.

Step 3

Sprinkle the flour over the butter and garlic mixture and whisk continuously for 1-2 minutes to form a smooth roux.

Step 4

Gradually pour in the milk, whisking constantly, to create a smooth, creamy base. Bring the mixture to a gentle simmer and cook for 3-4 minutes until slightly thickened.

Step 5

Lower the heat to medium-low and stir in the grated parmesan and shredded mozzarella cheeses. Add 1 teaspoon of salt and 1/2 teaspoon of black pepper. Mix until the cheeses are fully melted and the sauce is smooth.

Step 6

In a large skillet or pan, heat 1 tablespoon of olive oil over medium heat. Add the cooked spaghetti and toss to coat evenly. Pour the cheese sauce over the pasta and gently mix to combine. If the sauce is too thick, stir in some reserved pasta water, a little at a time, until the desired consistency is achieved.

Step 7

Taste and adjust seasoning with additional salt or pepper, if needed.

Step 8

Serve the pasta warm, garnished with fresh parsley for a pop of color and freshness.
