Ingredients

  • 2 slices Sourdough bread
  • 0.5 cups Sharp cheddar cheese, shredded
  • 0.5 cups Gruyere cheese, shredded
  • 2 tablespoons Unsalted butter, softened
  • 1 teaspoon Dijon mustard
  • 0.5 Yellow onion, thinly sliced
  • 1 tablespoon Olive oil
  • 1 teaspoon Sugar
  • 1 pinch Salt
  • 1 pinch Black pepper

Directions

Step 1

Heat a nonstick or cast iron skillet over medium heat.

Step 2

Add olive oil to the skillet, then toss in the thinly sliced onions with a pinch of salt, sugar, and black pepper. Cook, stirring occasionally, until the onions are caramelized and golden, about 10 minutes. Remove from heat and set aside.

Step 3

Spread softened butter evenly on one side of each slice of sourdough bread.

Step 4

On the unbuttered side of one slice, spread the Dijon mustard evenly. Layer with shredded cheddar cheese, shredded Gruyere cheese, and the caramelized onions. Top with the second slice of bread, buttered side facing out.

Step 5

Place the sandwich in the preheated skillet. Cook for 3-4 minutes on one side until golden brown and crisp, pressing gently with a spatula to encourage melting.

Step 6

Flip the sandwich carefully and cook for another 3-4 minutes, or until the second side is golden and the cheese has fully melted.

Step 7

Remove the sandwich from the skillet and let it rest for 1-2 minutes to allow the cheese to settle.

Step 8

Slice in half and serve immediately for a cheesy, sweet, and savory delight!
