Ingredients

  • 4 Flour tortillas
  • 4 cups Fresh spinach
  • 4 tablespoons Cream cheese
  • 1 cup Shredded mozzarella cheese
  • 1 cup Shredded cheddar cheese
  • 2 tablespoons Butter
  • 0.5 teaspoons Garlic powder
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Heat a large skillet over medium heat and add 1 tablespoon of butter. Once melted, add the fresh spinach and sauté until wilted, about 2-3 minutes. Season with salt, black pepper, and garlic powder, then remove from heat and set aside.

Step 2

In a small bowl, mix the cream cheese until smooth. Add the sautéed spinach and stir to combine evenly.

Step 3

Lay a tortilla flat and spread half of the spinach and cream cheese mixture over it. Sprinkle 1/2 cup of shredded mozzarella cheese and 1/2 cup of shredded cheddar cheese evenly on top. Place another tortilla on top to form the quesadilla.

Step 4

Place a clean skillet over medium heat and melt 1/2 tablespoon of butter. Carefully transfer the quesadilla to the skillet. Cook for 2-3 minutes per side, or until the tortilla is golden brown and the cheese has melted. Repeat the process with the remaining ingredients to make the second quesadilla.

Step 5

Use a sharp knife or a pizza cutter to slice each quesadilla into wedges. Serve hot with your choice of salsa, sour cream, or guacamole for dipping. Enjoy!
